One of the best salads

> I don't know if this salad has a name—please excuse my ignorance, but I've never really thought about it. I always call it the “pink salad,” hahaha, and the thing is, this salad isn’t just delicious—with its mix of salty and sweet flavors—it’s also very kid-friendly. Or at least my son loves it, and it’s the only salad he’ll eat; he doesn’t like any other salads, so for me, it’s a blessing that he loves it—since it has lots of healthy vegetables. Even though it has mayonnaise, I feel like it’s a salad that’s 100% worth making and eating.
> I hardly ever make this salad, but the few times I have, I feel like I’ve gotten a lot better at it. Let me tell you, the first time I tried making it, I made the big mistake of boiling the water first and then adding the egg—that caused my egg to crack. I still couldn’t believe what was happening, so I threw in two more eggs, but they burst immediately and opened up completely, spilling all over the pot. then I realized I was supposed to put the egg in cold water and let it heat up gradually with the water, hahaha—you learn from your mistakes. Anyway, for this salad we’ll use potatoes, carrots, beets, and eggs. Put the egg and the vegetables in water and turn on the stove until it comes to a boil. I take the egg out about 6 minutes after the water boils, and I leave the vegetables in until they soften—but not too much, since I need them to still be firm enough to dice into small cubes. Once they’re at the perfect consistency, I transfer them to a pot of cold water so I can cut them without burning myself.
> I start by peeling the vegetables—the skin comes off really easily, practically on its own—and then I dice the potato, carrot, beet, and egg.
> Then I add two tablespoons of mayonnaise and salt to taste, stir until everything is thoroughly mixed, and the salad is ready to serve with lunch. It’s a great option to eat on its own or as a side dish. As I mentioned, the flavor is exquisite—you can really taste the saltiness and sweetness of the carrots and beets—it’s a wonderful combination.
