Para gustos y sabores // Tastes and flavors vary

Admito que nunca he sido bueno para los sabores, sobretodo a la hora de identificar ciertos rasgos específicos en alguna comida o bebida. Me impresiona cómo muchas personas pueden diferenciar ciertos niveles de sabores en algo colmado de muchos ingredientes, incluso con la habilidad de hasta poder determinar qué fue lo que sobró o faltó. Pensando profundamente en esto hasta puedo decir que de todos mis sentidos el gusto es el que menos he sabido desarrollar. No es que no pueda saborear y disfrutar algo, solo que en un punto más minucioso no soy capaz de percibir a pleno lo que pueda estar comiendo o bebiendo.

Con todo y esto, hay cosas que sí puedo identificar porque son alimentos o bebidas que parecen tener una conexión mucho más especial, como por ejemplo la arepa que hacía mi abuela, la sabrosa sopa que hace mi madrina o el pollo en salsa negra que mi mamá prepara. Con mi abuela había un caso muy particular y especial a la vez, y es que cuando preparaba caraotas lograba un sabor tan bueno que a muchos les causaba curiosidad los tipos de ingredientes que ella usaba, pero la mayor sorpresa es que ella utilizaba tan solo dos, y entre esos uno de ellos era la sal. "El ingrediente principal es el amor que pones al cocinar", era de lo cual ella si hacía bastante alarde y a lo que le daba el mérito a su toque para el sabor.

It amazes me how many people can distinguish between different flavour nuances in something packed with lots of ingredients, and even go so far as to determine what was missing or what was there in excess. Thinking about it deeply, I’d even say that, of all my senses, taste is the one I’ve been least able to develop. It’s not that I can’t taste and enjoy something; it’s just that, on a more detailed level, I’m not able to fully perceive what I might be eating or drinking.

>Even so, there are certain things I can definitely identify with because they’re foods or drinks that seem to have a much more special connection, such as the arepa my grandmother used to make, the tasty soup my godmother cooks, or the chicken in black sauce my mum prepares. With my grandmother, there was a case that was both very particular and special: whenever she made black-eyed peas, she achieved such a delicious flavour that many people were curious about the ingredients she used, but the biggest surprise was that she used only two, and one of them was salt. “The main ingredient is the love you put into cooking,” was something she often boasted about, and to which she attributed the secret of her flavour.

La conexión entre los sabores y los olores con nuestras emociones es algo bastante complejo para explicar pero muy bueno para experimentar. Es impresionante todo lo que puede llegar a nosotros al comer un dulce, una fruta, o quizás tomar un jugo o una bebida que pueda traernos un recuerdo enmarcado. En mi caso hay comidas que automáticamente me ubican en el espacio y tiempo que viví cuando era un niño, cuando estaba en secundaria o incluso el tiempo estuve trabajando en una academia de idiomas. En el plano familiar, el aroma y el sabor del café es un protagonista innato, mientras que algunos postres suelen traer ciertos aires de nostalgia por momentos compartidos con quienes ya no están a mi lado.

Por eso creo que para mí es muy díficil definir un sabor favorito, uno que pueda encontrar en diferentes presentaciones y aún así terminar disfrutándolo a plenitud. Tal vez esto sea por lo que ya he mencionado, ya que al no poder saber distinguir o reconocer la particularidad de ciertos sabores, todos parecen estar bajo una línea más extensa y equilibrada. Recuerdo que en una ocasión me quemé la punta de la lengua y por más de un día estuve con esa sensación horrible de no percibir nada de lo que tomaba o bebía. Eso es lo que considero estar en un extremo en donde no identificad absolutamente nada y por mucho esfuerzo que quieras emplear terminas con una sensación que no parece arrojar ningún resultado.

It’s amazing how much can come flooding back when we eat a sweet, a piece of fruit, or perhaps drink a juice or a beverage that brings back a vivid memory. In my case, there are foods that automatically transport me back to the time and place I experienced as a child, when I was at secondary school, or even when I was working at a language school. On a family level, the aroma and flavour of coffee plays a central role, whilst certain desserts often evoke a sense of nostalgia for moments shared with those who are no longer by my side.

>That’s why I find it very difficult to pick a favourite flavour—one that I can find in different forms and still enjoy to the full. Perhaps this is down to what I’ve already mentioned: as I’m unable to distinguish or recognise the specific characteristics of certain flavours, they all seem to fall under a broader, more balanced category. I remember once burning the tip of my tongue and spending more than a day with that awful sensation of not being able to taste anything I ate or drank. That’s what I consider to be at one extreme, where you can’t identify absolutely anything, and no matter how much effort you put in, you end up with a sensation that seems to yield no result.

Es interesante como el tema de los sabores se ha mezclado, por así decirlo, con nuestra manera de poder comunicar y expresar lo que sentimos ante determinadas situaciones de la vida. Creo que muchos entendemos cuando alguien hace una referencia sobre una amarga experiencia, un dulce momento o una sensación agridulce hacia algún tema en particular. Es como si la clase de sabor se convirtiera en una especie de adjetivo que resalta una idea que va más allá de lo simple, tal como si le quisiéramos agregar un ingrediente especial que resalte lo que hemos preparado. En este punto debe ser bastante oportuno el poder reflexionar y ver en cuántas ocasiones nos podemos valer de los sabores para destacar una idea principal en cuanto a algo vivido y como queremos que los demás lo perciban.

Si hablamos de la vida, ciertos tramos de la misma pueden estar en un punto deleitable o uno lleno de ciertos sinsabores que nos hacen mucho ruido de forma constante. Si hoy tocara mencionar algo específico, algunos de seguro nos sentimos como en ciertas ráfagas que vienen y van, algunas muy dulces y otras no tanto, y de la misma forma en como podemos pasar de un sabor a otro, así nos cambian las circunstancias y todo lo que los mismos cambios conllevan. Difícilmente se pueda elegir un sabor que predomine en nuestra existencia, pero lo cierto es que dicha diversidad le da un color singular a la vida.

>It’s interesting how the concept of flavours has, so to speak, become intertwined with the way we communicate and express how we feel in certain situations in life. I think many of us understand when someone refers to a bitter experience, a sweet moment or a bittersweet feeling towards a particular subject. It is as if the type of flavour becomes a sort of adjective that highlights an idea that goes beyond the simple, just as if we wanted to add a special ingredient to bring out the best in what we have prepared. At this point, it is worth reflecting on just how often we can use flavours to highlight a key idea regarding an experience we have had and how we want others to perceive it.

>When we talk about life, certain stages of it can be a delight, or they can be filled with certain hardships that constantly weigh heavily on us. If we were to mention something specific today, some of us surely feel as though we are caught up in certain gusts that come and go, some very sweet and others not so much, and just as we can move from one flavour to another, so too do our circumstances change, along with everything that those changes entail. It is difficult to choose a single flavour that predominates in our existence, but the truth is that this diversity gives life a unique colour.
