Herencia culinaria [ESP-ENG]

“¡Uhm, huele delicioso!”, es una frase constante en mi familia. Más aún en la época navideña: es que no había llegado diciembre y ya comenzaban las paredes, tomacorrientes, la nevera, la cocina a alegrarse, pues o les tocaba cambio o retoque, y todos los que allí hacíamos vida comenzábamos a tejer las comidas propias de esa época, y mis padres eran los que comandaban el batallón para la preparación de las exquisitas hallacas.

Nos sentábamos en la mesa de ocho puestos y cada quien sabía lo que debía hacer para ayudar a prepararlas. Y cuando salían las primeras hallacas del fogón, ese olor penetraba las fibras de mi ser; ese momento era ¡espectacular! Esto, mis estimados lectores, no tendrá parangón en la historia. Ese plato emblema de nuestra Venezuela forma parte de nuestros sabores culturales, de nuestro ser.

Por tradición, mi familia acompañará la hallaca con ensalada de pollo, dulce de lechosa, pollo horneado o pernil y pan de jamón que hacían mi madre y mi sobrino Eduardo; este tuvo que emigrar. @mafalda2018 y mi hermano Manuel serán los encargados de preparar los deliciosos panes de jamón y otros tipos de panes también. Cada año mejorarán las recetas y siempre emergerán por los pasillos de la casa los olores a camaradería, abrazos y sonrisas. Moisés, mi sobrino, con cuatro en mano, tocaba aguinaldos y música llanera para alegrarnos el momento.

Moisés, mi hermano, y Eduardo eran los encargados de degustar las exquisitas comidas. Pasaban por el mesón mientras yo preparaba el sazón del pernil; esa malta dentro de los ingredientes no podía faltar. Gaby y Rosalbita, mis sobrinas, junto conmigo, mamá y mi cuñada Rosalba, éramos las encargadas de los postres. Cada olor, cada sabor ha sido especial.

Aunque casi todos emigraron, mantenemos la tradición con menos ingredientes —ya saben el porqué—, pero el hogar materno, la casa de Cantarrana, la casa de @mafalda2018, mi casa, huele a nostalgia; las paredes respiraban recetas, algarabía y esas sonrisas cuando mamá o mi cuñada Rosalba preparaban esa suculenta sopa de gallina, pero es que no era ¡cualquier sopa!, y ¡ese sabor! Aparte, esta tenía que tener como ocho patas porque a mis sobrinas y a @mafalda2018 les encanta.

And when the first hallacas came out of the oven, that aroma would penetrate every fiber of my being; that moment was spectacular! This, my dear readers, is unparalleled in history. This iconic dish of our Venezuela is part of our cultural flavors, of our very being.

>Traditionally, my family will serve the hallaca with chicken salad, dulce de lechosa, baked chicken or ham, and pan de jamón made by my mother and my nephew Eduardo; he had to emigrate. @mafalda2018 and my brother Manuel will be in charge of preparing the delicious pan de jamón and other types of bread as well. Every year the recipes will improve, and the scents of camaraderie, hugs, and smiles will always waft through the hallways of the house. Moisés, my nephew, with his four-string guitar in hand, would play Christmas carols and llanera music to liven up the moment.

>Moisés, my brother, and Eduardo were in charge of tasting the delicious meals. They would stop by the kitchen while I prepared the seasoning for the ham; that malt among the ingredients was a must. Gaby and Rosalbita, my nieces, along with me, Mom, and my sister-in-law Rosalba, were in charge of the desserts. Every scent, every flavor has been special.

>Although almost everyone has moved away, we keep the tradition alive with fewer ingredients—you know why—but my mother’s home, the house in Cantarrana, @mafalda2018’s house, my house, smells of nostalgia; the walls breathed recipes, excitement, and those smiles when Mom or my sister-in-law Rosalba prepared that succulent chicken soup—but it wasn’t just any soup! And that flavor! Besides, this one had to have about eight legs because my nieces and @mafalda2018 love it.

La amiga @angelica7 del encuentro de @talentos nos invitó a escribir historias acerca de un tema hermoso, "Sabores del recuerdo", ¡wuao!, que me llevó a recorrer los rincones de mi hogar materno, el amor unido a las comidas que preparábamos más allá de los tiempos; esos olores y sabores quedaron grabados en la memoria, en el corazón como huella indeleble.

Mientras deslizaba los dedos en el teclado, me pareció escuchar a mi madre decirle a mi padre: “Papi, recuerda las patas de la gallina”. Cada vez que lo enviaba con una lista interminable al mercado, este respondía: “Mija, ¿y cómo traigo diez patas si las dos gallinas suman solo cuatro?” Y al final expresaba con una sonrisa de oreja a oreja: “¿Y el vuelto a quién se lo doy?” Todos esos olores, sabores y anécdotas formarán parte de mi herencia culinaria.

@talentos ha tenido esa particularidad de llevarnos a esos recuerdos emblemáticos, de hacerme temblar de la emoción con temas tan espectaculares como “Sabores del recuerdo”, que en esta oportunidad me hicieron hurgar no tan profundo en mi memoria para extraer esos hermosos momentos que quedaron grabados en mi ADN. Al recordar a mi gente, a mis padres, ancestros en el compartir culinario, no pude dejar de sentir gozo en el corazón.

Me formé en un hogar donde es tradición compartir la comida, los postres, meriendas y el amor con que fueron preparados y disfrutados; con mis hermanos, amigos y vecinos; eso reforzó el amor fraternal y los lazos de amistad. Ha sido una de las más bellas herencias que recibí y esta le dio sentido a mi vida y al crecimiento como ser humano.

¡Wuao! Cómo evitar las lágrimas de añoranza, de felicidad por los momentos vividos al lado de mi bella familia. Esa espectacular herencia culinaria huele a abrazos, a nostalgia, a perejil, a cilantro, a laurel, comino, cebollín, ajo, pimentón, celery, entre otros, y a todo lo que llegara a la cocina, así fuera gallina, pescado, pollo o chivo.

Y sobre todo las comidas que se preparaban, que eran aderezadas con curry, olería a talkary, eso que quedó impregnado como una segunda piel.

It has been one of the most beautiful legacies I have received, and it has given meaning to my life and my growth as a human being.

>Wow! How can I hold back the tears of longing and happiness for the moments I’ve shared with my beautiful family? That spectacular culinary legacy smells of hugs, of nostalgia, of parsley, cilantro, bay leaf, cumin, chives, garlic, paprika, celery, among others, and of everything that made its way into the kitchen, whether it was chicken, fish, or goat.

Empanadas dulces

Habrán vivencias que nos transportarán a esos sabores disfrutados los fines de semana en el hogar materno; por esa razón haré empanadas dulces y pastelitos y continuaré con la herencia culinaria. Mi hermosa madre hacía las empanadas dulces y eran de harina de maíz para el desayuno y pastelitos de harina de trigo para la cena, con rellenos variados. ¡Ohh, esos sabores!

Las preparaba en cualquier momento; pude estar sentada viendo TV con mis hermanos y de la cocina emanaban esos olores que activaban mis papilas gustativas. Mis hermanos y yo siempre queríamos las primeras que salían. Las acompañábamos con café, chocolate caliente, o refrescos.

Pasta a la jardinera

Mi bello padre era amante de la cocina; le encantaba el pescado en todas sus versiones, pero tenía una especialidad: preparaba la pasta a la jardinera, esta, ¡"no jugaba carrito, una delicia"!; consistía en picar aliños en variados tamaños: ají dulce, cebolla, tomate, y no podía faltar el ajo machado con una piedra especial; no sé si en la casa de alguno la tendrán; en mi cocina no podrá faltar.

Él tenía un ingrediente especial: mucho amor. Guisaba los aliños y cocinaba espagueti o pasta corta; particularmente, me encanta la pasta larga. Una vez lista la pasta, le agregaba los aliños guisados y queso blanco rallado, eso sí, por la parte más gruesa, y eso era un plato especial para la cena, ¡qué tiempos aquellos!

Arroz con pollo

A @mafalda2018 y a mi sobrino Jesús les encantará el arroz con pollo que les cocinaré cada vez que nos veamos; ese será un plato asiduo cuando me visiten o viceversa, y este llevará, además de los aderezos y condimentos propios para prepararlo, otros ingredientes especiales: el cariño, un toque de ajinomoto, amor y esmero para hacerlos sentir en su hogar.

> Sweet empanadas

My beautiful mother used to make sweet empanadas out of cornmeal for breakfast and wheat-flour pastries for dinner, with a variety of fillings. Oh, those flavors!

>She would make them at any time; I might be sitting watching TV with my siblings, and those aromas would waft from the kitchen, awakening my taste buds. My siblings and I always wanted the first ones out of the oven. We would have them with coffee, hot chocolate, or soda.

> Pasta with mixed vegetables

>My wonderful father loved to cook; he adored fish in all its forms, but he had one specialty: he made pasta a la jardinera, which was absolutely delicious! It involved chopping ingredients into various sizes: bell peppers, onions, tomatoes, and of course, garlic crushed with a special stone; I don’t know if anyone else has one at home, but in my kitchen, it’s a must-have.

>He had a special ingredient: lots of love. He would sauté the vegetables and cook spaghetti or short pasta; personally, I love long pasta. Once the pasta was ready, he’d add the sautéed vegetables and grated white cheese—from the thickest part, mind you—and that was a special dinner dish. Those were the days!

> Chicken and Rice

> @mafalda2018 and my nephew Jesús will love the chicken and rice I’ll cook for them every time we see each other; it’ll be a regular dish whenever they visit me or I visit them, and it’ll include, in addition to the usual seasonings and spices, some special ingredients: affection, a pinch of ajinomoto, love, and care—all to make them feel right at home.

Café a la carta

En mi familia, el que no cocinara, por lo menos hará café y ¡a la carta!, al gusto de cada quien.

Y este comenzará a oler en la cocina desde antes del amanecer; ese sabor en boca es un símbolo familiar. Y lo tomaremos a la carta; habrá tipo cerrero, otros “guayoyo”, con leche o marroncito, con azúcar o sin esta, con pan o sin este; cada quien lo tomará a su manera, a lo venezolano.

Mis padres lo tomaban como yo, negrito, no tan fuerte; a @mafalda2018 le encanta cerrero, y amamos un café con leche, pero lo más importante será el significado de dedicar un tiempo valioso para compartir momentos especiales con los seres que amamos; ha sido parte de mi herencia culinaria.
