¡Hola, comunidad de Hive Food! Hoy quiero compartir con ustedes una de mis recetas favoritas y consentidas para endulzar cualquier ocasión especial: un delicioso Pastel de Tres Leches de Cajeta. La combinación de la esponjosidad del bizcocho con la riqueza de la cajeta y la cremosidad de las tres leches es simplemente irresistible. ¡Manos a la obra y vamos con la receta! PASTEL DE TRES LECHES DE CAJETA 😋 Ingredientes Para el bizcocho: 5 huevos a temperatura ambiente 150 g de azúcar 150 g de harina de trigo 1 cucharadita de polvo para hornear 1 cucharadita de esencia de vainilla 60 ml de leche Mantequilla y harina para preparar el molde Para la mezcla de tres leches: 1 lata de leche evaporada (aproximadamente 360 ml) 1 lata de leche condensada (aproximadamente 395 g) 200 ml de crema de leche o media crema 150 g de cajeta 1 cucharadita de esencia de vainilla Para decorar: 400 ml de crema para batir muy fría 3 cucharadas de azúcar glas 1 cucharadita de esencia de vainilla 150 g de cajeta 80 g de nueces pecanas picadas Preparación 1. Precalienta el horno a 175 °C y engrasa y enharina un molde redondo de 22–24 cm, colocando papel vegetal en la base para facilitar el desmoldado. 2. Separa las claras de las yemas y bate las claras hasta que comiencen a espumar; agrega el azúcar poco a poco y continúa batiendo hasta obtener un merengue firme y brillante. 3. Incorpora las yemas una por una, añade la vainilla y la leche y mezcla suavemente para no perder el aire acumulado. 4. Tamiza la harina junto con el polvo para hornear e intégralos en varias tandas con movimientos envolventes, evitando mezclar en exceso para conservar un bizcocho ligero y esponjoso. 5. Vierte la masa en el molde, nivela suavemente y hornea durante 30–35 minutos o hasta que al insertar un palillo en el centro salga limpio; deja reposar 10 minutos antes de desmoldar. 6. Mezcla la leche evaporada, la leche condensada, la crema de leche, 150 g de cajeta y la vainilla hasta obtener un líquido homogéneo y sin grumos. 7. Coloca el bizcocho tibio en una fuente profunda, perfora toda la superficie con un tenedor o palillo y vierte lentamente la mezcla de tres leches para que se absorba de manera uniforme. 8. Cubre el pastel y refrigéralo durante al menos 6 horas, preferentemente toda la noche, para que absorba completamente las leches y adquiera una textura húmeda sin desmoronarse. 9. Bate la crema muy fría con el azúcar glas y la vainilla hasta formar picos firmes, procurando no batirla demasiado para evitar que se corte. 10. Cubre el pastel frío con la crema batida, decora con hilos de cajeta y nueces picadas y refrigéralo durante 30 minutos antes de cortarlo para servir rebanadas limpias.

Grease and flour a 22–24 cm (9-inch) round cake pan, placing parchment paper at the bottom to make it easier to unmold later. Separate the egg whites from the yolks. Beat the whites until they begin to foam; gradually add the sugar and continue beating until you get a firm, glossy meringue. Incorporate the yolks one by one, add the vanilla and milk, and mix gently to avoid losing the accumulated air.
