When Ingredients Are Limited, Creativity Takes Over

There are really times in life when we need to be resourceful because sometimes, not everything we need is available at home. That’s exactly what happened yesterday.
My mom and I hadn’t been able to go to the market for a few days because we had both been quite busy. So yesterday, when I checked the refrigerator because I was about to prepare dinner, I realized that the only ingredients we had left were ground pork, pechay, and onions.
Usually, whenever I cook ground pork, I like to add potatoes and carrots. But yesterday, there was nothing else in the refrigerator, so I had to get a little creative. Instead of my usual recipe, I decided to make ground pork with pechay.
We didn’t have garlic either, which is something I usually use together with onions. But instead of worrying about what we didn’t have, I simply worked with what was available. Sometimes, you just have to make do with what you have.
Whenever I cook ground pork, I usually put the meat in the pan first so I can render its natural oil. If the pork doesn’t release enough oil, that’s when I add a little cooking oil.
Once the ground pork starts to brown, I add the sliced onions and let them cook together until the onions become slightly brown and fragrant. Then I season everything before adding a small amount of water. I let it simmer for a few minutes, then added the pechay and mixed everything together.
And just like that, we already had something to serve for dinner.
It may not have been the meal I originally planned to cook, but it reminded me that being resourceful can go a long way. You don’t always need complete ingredients or a perfect plan to make something good. Sometimes, all you need is a little creativity and the willingness to work with whatever you have.
