¡Feliz día para todos!
Este jueves decidí organizar mi despensa y, entre las pequeñas porciones que tenía guardadas, encontré unos pedacitos de carne de ovejo y unas costillas de cerdo. Así que quise aprovecharlos para componer un menú novedoso, compuesto por un guisado mixto de carne de ovejo y costillas de cerdo, arroz con frijoles, puré de plátano y, para culminar, un delicioso postre de guayaba.
Los invito a acompañarme para conocer el paso a paso de esta exquisita receta.
Lo primero que preparé fue el guisado mixto. Ya contaba con unas pequeñas postas de carne de ovejo que había prehervido previamente, una práctica que suelo hacer para ayudar a eliminar parte de su olor característico. También tenía las costillas de cerdo ya troceadas, que volví a enjuagar y reservé.
Seguidamente preparé las especias que iba a utilizar. Pelé varios dientes de ajo y tomé un poco de comino, al que le di un ligero machacado para liberar mejor su aroma. También corté un limón por la mitad y lo dejé listo para utilizar su zumo durante la preparación.
Luego coloqué en una olla dos cucharadas de aceite y comencé a saltear el ajo. Después incorporé las porciones de carne de ovejo y las costillitas de cerdo, dejándolas saltear ligeramente. Seguidamente añadí tres cucharadas de pasta de tomate, un cuarto de cucharada de sal, el zumo de un limón entero y el comino que había preparado.
Continué removiendo para integrar todos los ingredientes y agregué media taza de agua. Una vez que todo quedó bien incorporado, tapé mi olla de presión y dejé cocinar la preparación durante 45 minutos.
Transcurrido este tiempo, la carne de ovejo ya estaba blandita y las costillas de cerdo prácticamente se desprendían del hueso. Los sabores se habían integrado de maravilla, dando como resultado un guisado con una salsa espectacular.
Como segunda preparación elaboré un arroz con frijoles para tres comensales. Para comenzar, tomé tres cuartos de taza de frijoles colorados que ya tenía limpios, los lavé y los coloqué en una olla con una cucharada de aceite y dos tazas de agua. Luego los llevé a presión durante 25 minutos, hasta conseguir que quedaran bien blanditos.
Una vez listos, vertí los frijoles junto con su agua de cocción en mi olla arrocera. También añadí dos tazas de arroz que tenía previamente revisado y lavado, media cucharada de sal, unos dientes de ajo pelados y triturados y comino incorporado de forma natural.
Con todo ya en mi olla arrocera, la tapé y dejé cocinar durante cinco minutos. Con este sencillo proceder obtuve, amigos, un delicioso y esponjoso arroz con frijoles.
El tercer elemento del menú lo constituyó un puré de plátano, una preparación que en estos días he estado incorporando con frecuencia y que ya no falta en mis menús.
Para realizarlo empleé cinco plátanos: tres verdes y dos maduros. Los lavé, los pelé con ayuda de un cuchillo y luego los corté por la mitad. Seguidamente los coloqué en una olla con suficiente agua para cubrirlos, añadí un puntito de sal y una cucharada de zumo de limón, y los dejé hervir durante 15 minutos.
Una vez listos, retiré los plátanos del agua y los coloqué en un recipiente para aplastarlos. Incorporé unos dientes de ajo pelados y triturados, un poco de comino y una cucharada de manteca de cerdo que tenía reservada. Luego fui integrando todo hasta obtener una masa homogénea y bien suave.
El contraste entre el dulzor de los plátanos maduros y el sabor de los verdes hizo de este puré un acompañamiento estupendo, que combinó perfectamente con el resto de los alimentos del menú.
Como cuarto y último elemento del menú quise incorporar una pequeña sensación dulce que complementara todo lo anterior: una mermelada de guayaba que, créanme, fue el broche de oro para cerrar este hermoso jueves familiar.

English A Thursday of Mixed Stew, Rice with Beans, Mashed Plantains and Guava Dessert

This Thursday I decided to organize my pantry and, among the small portions I had stored, I found a few pieces of lamb and some pork ribs. So I decided to make good use of them to put together a new menu, consisting of a mixed lamb and pork rib stew, rice with beans, mashed plantains and, to finish, a delicious guava dessert.
I invite you to join me and discover the step-by-step process of this exquisite recipe.
The first thing I prepared was the mixed stew. I already had some small portions of lamb that I had previously parboiled, a practice I usually follow to help remove some of its characteristic smell. I also had the pork ribs already cut into pieces, which I rinsed again and set aside.
Next, I prepared the spices I was going to use. I peeled several cloves of garlic and took some cumin, giving it a light crushing to release more of its aroma. I also cut a lemon in half and left it ready to use its juice.
Then I placed two tablespoons of oil in a pot and began sautéing the garlic. After that, I added the portions of lamb and the pork ribs, letting them sauté lightly. Next, I added three tablespoons of tomato paste, a quarter tablespoon of salt, the juice of one whole lemon and the cumin I had prepared.
I continued stirring to combine all the ingredients and added half a cup of water. Once everything was well incorporated, I covered my pressure cooker and let the preparation cook for 45 minutes.
After this time, the lamb was already nice and tender, and the pork ribs were practically falling off the bone. The flavors had blended wonderfully, resulting in a stew with a spectacular sauce.
As the second preparation, I made rice with beans for three people. To begin, I took three-quarters of a cup of red beans that I already had cleaned, washed them and placed them in a pot with one tablespoon of oil and two cups of water. Then I cooked them under pressure for 25 minutes, until they became nice and soft.Once ready, I poured the beans together with their cooking liquid into my rice cooker. I also added two cups of rice that I had previously checked and washed, half a tablespoon of salt, some peeled and crushed garlic cloves and cumin incorporated naturally.
With everything already in my rice cooker, I covered it and let it cook for five minutes. With this simple procedure, friends, I obtained delicious and fluffy rice with beans.
The third element of the menu was mashed plantains, a preparation that I have been incorporating frequently these days and that is now always present in my menus.
To make it, I used five plantains: three green and two ripe. I washed them, peeled them with the help of a knife and then cut them in half. Next, I placed them in a pot with enough water to cover them, added a pinch of salt and one tablespoon of lemon juice, and let them boil for 15 minutes.Once ready, I removed the plantains from the water and placed them in a container to mash them. I added some peeled and crushed garlic cloves, a little cumin and one tablespoon of lard that I had set aside. Then I mixed everything together until I obtained a smooth and homogeneous mixture.
The contrast between the sweetness of the ripe plantains and the flavor of the green ones made this mash an excellent side dish, which combined perfectly with the rest of the foods on the menu.
As the fourth and final element of the menu, I wanted to incorporate a small sweet treat that would complement everything above: a guava marmalade that, believe me, was the perfect finishing touch to close this beautiful family Thursday.I hope you enjoyed it, friends, and that you are encouraged to include this menu in one of your future meals.
