Bocadillos de higos | Aprovechando la cosecha [ES][EN]

Siempre he disfrutado comer bocadillos y más cuando lo combino con algún queso amarillo. He comido bocadillos de diferentes frutas, pero el de higos es uno de mis favoritos. Como mi higuera está en temporada de frutos, he aprovechado a cosechar muchísimos higos y preparar diferentes recetas. Nunca había visto a mi higuera dar tantos frutos y ha sido gratificante poder cosecharlos y utilizarlos.

La clave para preparar bocadillos firmes es la cocción. Este tipo de dulces requiere muchísima cocción o, como se dice en Venezuela, mucha paleta. La idea es lograr evaporar todo líquido, activar la pectina y que los azúcares se caramelicen y luego ayuden a la consistencia. Una clave es que, cuando se cree que ya está el punto de cocción, es cocinarlo un poco más de tiempo para asegurar la consistencia. Dependiendo de la cantidad de fruta, el trabajo de cocción puede ser agotador y por eso ha sido un dulce que, artesanalmente hablando, ha venido desapareciendo.

> The key to making firm candies is the cooking process. This type of candy requires a lot of cooking—or, as they say in Venezuela, a lot of “paleta.” The idea is to evaporate all the liquid, activate the pectin, and allow the sugars to caramelize, which then helps achieve the right consistency. A key tip is that, even when you think it’s reached the right consistency, you should cook it a little longer to ensure it sets properly. Depending on the amount of fruit, the cooking process can be exhausting, which is why this traditional treat has been gradually disappearing from artisanal production.

Hacer bocadillos es una manera de aprovechar la fruta en exceso de maduración y así transformarla y terminar con otra preparación que va a durar muchísimo tiempo. En este caso, mis higos no estaban maduros, estaban todavía verdes, y te voy a enseñar el proceso a seguir para evitar sabores amargos. Si quieres aprender a preparar estos bocadillos de higos, estos son los ingredientes que necesitas:

> Making delicacy is a way to make use of overripe fruit, transforming it into a dish that will last a very long time. In this case, my figs weren’t ripe—they were still green—and I’m going to show you the process to follow to avoid any bitter flavors. If you want to learn how to make these fig delicacy, here are the ingredients you’ll need:

- 1 kg de higos - 400 gr de azúcar - 3 gr de agar agar - Jugo de 1 limón

- 1 kg of figs - 400 gr of sugar - 3 gr of agar-agar - Juice of 1 lemon

Preparación || Preparation

- Si los higos no están completamente maduros, se cortan por la mitad y se colocan en remojo por 20 min. Se cambia el agua y se lleva a cocción hasta que estén suaves.

> - If the figs aren't fully ripe, cut them in half and soak them for 20 minutes. Change the water and cook them until they're soft.

- Se descarta toda el agua de la cocción y se procesan los higos hasta obtener como una pasta. Si quieres que el bocadillo no tenga las semillas, puedes pasar la pasta de higos por un colador.

> - Drain all the cooking liquid and process the figs until they form a paste. If you want the delicacy to be seedless, you can strain the fig paste through a sieve.

- Se coloca la pasta en una olla de fondo grueso, se agrega el azúcar y el jugo de limón. Se lleva a cocción, removiendo constantemente para evitar que se pegue al fondo y se queme. Pasados unos 30 minutos de cocción, se disuelve el agar agar en un poco de agua y se agrega. Se debe controlar la temperatura, apagar el fuego, prenderlo e incluso mover la olla para evitar un exceso de temperatura. Cuando la mezcla está muy espesa, se pega y quema con facilidad.

> - Place the paste in a heavy-bottomed pot, add the sugar and lemon juice. Bring to a boil, stirring constantly to prevent it from sticking to the bottom and burning. After about 30 minutes of cooking, dissolve the agar-agar in a little water and add it to the pot. Monitor the temperature carefully; turn the heat off, then back on, and even shake the pot to prevent it from getting too hot. When the mixture is very thick, it sticks and burns easily.

- Yo tardé 45 minutos de cocción y puedes saber cuándo está al mover la mezcla con una espátula; estando la olla en el fuego, la mezcla no se vuelve a unir.

> - It took me 45 minutes to cook, and you can tell when it's done by stirring the mixture with a spatula; while the pot is on the stove, the mixture won't come back together.

- En una bandeja rectangular, se coloca azúcar en el fondo, se agrega la mezcla de higos, se espolvorea azúcar por encima y se deja enfriar por completo a temperatura ambiente por lo menos 6 horas. Se voltea, se espolvorea azúcar y se deja reposar 1 hora. Se corta el bocadillo y se pasa por azúcar. El azúcar ayuda a que se forme una capa crocante alrededor del bocadillo.

> - In a rectangular pan, spread sugar on the bottom, add the fig mixture, sprinkle sugar on top, and let it cool completely at room temperature for at least 6 hours. Flip it over, sprinkle with sugar, and let it sit for 1 hour. Cut the treat into pieces and roll them in sugar. The sugar helps form a crispy coating around the treat.

Ya el bocadillo está listo. Si no quieres agregar azúcar extra, puedes regresar el molde y tapar con papel de horno a piel, para evitar que se reseque. Si dejas que el bocadillo repose más tiempo antes de cortarlo, te aseguras una buena consistencia. El agar agar ayuda a la consistencia, pero puedes omitir este ingrediente y asegurar una buena cocción.

> The snack is now ready. If you don't want to add extra sugar, you can turn the mold upside down and cover it with parchment paper to prevent it from drying out. If you let the snack set longer before cutting it, you'll ensure a good consistency. Agar-agar helps with the consistency, but you can omit this ingredient and still ensure it cooks properly.
