Comfort Food: Chicken Noodle Soup

Hi bloggers and food lovers, how are you all today? I hope you’re having a great day. Today I’m going to share a comforting, warm dish that’s perfect for cold weather. It’s called Mie Sop Ayam or, as we know it, chicken noodle soup. This dish is warm and cooked with a variety of spices. Okay, let’s get right to it
Ingredients:
- 50 grams of bean sprouts - 1 handful of bird’s eye chilies - 1 bunch of Chinese cabbage - 2 stalks of green onions - 2 stalks of celery - 300 grams of chicken - 1 carrot - 1 potato - 3 sheets of rice vermicelli - 3 liters water - 2 tbsp cooking oil - ground spices (turmeric, ginger, garlic, shallots, candlenuts, nutmeg, black pepper)
- aromatic spices:
- 1 bay leaf - 2 cinnamon sticks - 2 cardamom pods - 4 cloves - 1 star anise
Instructions:
- Sauté the ground spices and bay leaf in a pot until fragrant
- Add the remaining aromatic spices and sauté briefly
- Add the chicken and stir-fry until half-cooked
- Pour the water into the pot
- Let it come to a boil
- While waiting for the soup to boil, soak the rice vermicelli in water and let it sit until it softens
- Once it starts boiling, add the thick slices, carrots, celery leaves, and green onions
- Add the coarsely chopped bird's eye chilies
- Cook briefly to soften the carrots
- Turn off the heat
- Place the softened rice noodles into a bowl
- Add the chopped mustard greens and bean sprouts
- Pour the noodle soup broth into the bowl
- Chicken Noodle Soup is ready to serve
